Delicious and tender Birria Tacos filled with flavorful beef, melted cheese, and aromatic spices, served in warm corn tortillas.

Ingredients

  • 2 pounds beef chuck or brisket
  • 4 dried guajillo peppers
  • 3 dried ancho peppers
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • 4 cups beef broth
  • Corn tortillas
  • Oaxacan cheese, shredded
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions

  1. In a pot, combine beef, guajillo peppers, ancho peppers, onion, garlic, cumin, oregano, salt, and pepper. Add beef broth and bring to a boil.
  2. Reduce heat and simmer for about 180 minutes or until the meat is tender.
  3. Shred the beef using two forks.
  4. Warm the corn tortillas in a skillet over medium heat.
  5. Assemble the tacos by adding shredded beef and a sprinkle of Oaxacan cheese to the tortillas.
  6. Fry each taco in the skillet until the cheese melts and the tortillas are crispy.
  7. Serve with consomé for dipping, garnished with cilantro and lime wedges.
