A warm and comforting Beef Stroganoff featuring tender beef, buttery egg noodles, and a luscious creamy sauce.

  • 1 tablespoon avocado oil or olive oil
  • 1 pound lean ground beef (90/10 or 93/7)
  • 8 ounces cremini or button mushrooms, sliced
  • ½ medium onion, diced (about ¾ cup)
  • 3 cloves garlic, minced (about 1 tablespoon)
  • ¼ teaspoon salt (more to taste)
  • ¼ teaspoon black pepper (more to taste)
  • 2 tablespoons all-purpose flour
  • 2 teaspoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 cup low-sodium beef broth
  • ½ cup full-fat sour cream
  • 1 ½ cups egg noodles, uncooked
  • Fresh parsley, minced (optional for garnish)

Instructions

  1. Heat the oil in a large skillet over medium heat. Add the ground beef and brown for about 5 minutes.
  2. Add mushrooms, onions, garlic, salt, and pepper to the skillet, and cook for another 5-7 minutes until the onions are translucent.
  3. Sprinkle flour over the beef and veggies, mixing well.
  4. Add Worcestershire sauce, Dijon mustard, and beef broth, stirring until everything is combined and simmer for about 3-4 minutes until thickened.
  5. Remove from heat and stir in sour cream. Let sit for 5-10 minutes to thicken further.
  6. Toss the beef mixture with cooked egg noodles or serve stroganoff over noodles.
  7. Garnish with parsley, adjust seasoning, and serve.
