450 g salmon fillets, skinless, cut into four portions
60 ml mayonnaise
30 ml sriracha or chili sauce
15 ml honey or maple syrup
15 ml lime juice
5 ml soy sauce or tamari
1/2 teaspoon garlic powder
1/4 teaspoon paprika
Salt, to taste
Black pepper, to taste
Sesame seeds, for garnish
Scallions (green onions), sliced, for garnish
Instructions
Whisk together the glaze: in a small bowl, combine mayonnaise, sriracha, honey, lime juice, soy sauce, garlic powder, and paprika until silky. Taste and adjust heat or sweetness as needed.
Prepare the salmon: pat the fillets dry with paper towels, then season lightly with salt and pepper.
Cook the salmon: heat a nonstick skillet over medium-high heat with a thin coating of oil. Add the salmon and sear for about 3–4 minutes on the first side.
Glaze and finish: reduce heat to medium, brush the glaze over the top of each fillet, and cook for another 1–2 minutes.
Rest and serve: transfer the Bang Bang Salmon to a platter and let it rest for 2–3 minutes. Garnish with sesame seeds and scallions.

Adjust the glaze to your preferred balance of heat and creaminess.
Finish in the oven for a more even cook if desired.
