Bang Bang Chicken Fried Rice is a comforting dish with a creamy, spicy sauce and tender chicken chunks served over fluffy rice. It’s an easy recipe to make at home, perfect for a family meal.

  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1/2 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • Vegetable oil, for frying
  • Cooked rice, for serving
  • Chopped scallions, for garnish
  • Sesame seeds, for garnish
  • For the Bang Bang Sauce:
  • 1/2 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha (or more, to taste)
  • 1 tablespoon honey
  • 1 teaspoon rice vinegar
  • 1 clove garlic, minced

Instructions

  1. In a shallow dish, combine flour, cornstarch, salt, and pepper.
  2. In another shallow dish, place the beaten eggs.
  3. In a third shallow dish, place the panko breadcrumbs.
  4. Dredge each piece of chicken first in the flour mixture, then dip in the egg, and finally coat with panko breadcrumbs.
  5. Heat about 1 inch of vegetable oil in a large skillet or Dutch oven over medium-high heat to 350°F (175°C).
  6. Carefully add the breaded chicken pieces to the hot oil, working in batches to avoid overcrowding the pan.
  7. Fry for 3-5 minutes per side, or until golden brown and cooked through. Remove chicken with a slotted spoon and place on a wire rack to drain.
  8. While the chicken is frying, prepare the Bang Bang sauce. In a medium bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, rice vinegar, and minced garlic until smooth.
  9. Serve the crispy Bang Bang chicken over cooked rice. Drizzle generously with the Bang Bang sauce.
  10. Garnish with chopped scallions and sesame seeds.

Notes

  • For a spicier sauce, add more sriracha to your preference.
  • You can bake or air fry the chicken for a lighter option. Bake at 400°F (200°C) for 20-25 minutes, flipping halfway. Air fry at 380°F (190°C) for 12-15 minutes.
