Instructions
Prepare the Peanut Butter Filling: In a medium bowl, combine peanut butter, powdered sugar, vanilla extract, and sea salt. Mix until smooth.
Fold in crushed peanuts and mini chocolate chips. Cover and refrigerate for at least 30 minutes.
Prepare the Banana Slices: Peel and slice bananas into 1/2-inch thick rounds. Arrange on a parchment-lined baking sheet.
Assemble the Banana Snickers Bites: Scoop the chilled peanut butter filling onto one banana slice and top with another banana slice, creating sandwiches.
Freeze the assembled bites on the baking sheet for at least 1 hour until firm.
Melt the Chocolate: Place chopped chocolate and coconut oil in a heat-safe bowl over simmering water. Stir until completely melted and smooth. Let cool slightly.
Dip and Decorate: Dip each frozen banana bite into the melted chocolate, coating completely. Let excess chocolate drip off.
Place dipped bites back on the parchment-lined baking sheet. Drizzle with caramel sauce and sprinkle with crushed peanuts while the chocolate is wet.
Freeze for at least 15 minutes to set the chocolate.
