Ingredients
Scale
1 cup (240 ml) all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 tsp ground cinnamon
1/4 cup (50 g) granulated sugar
1 large egg
1/2 cup (120 ml) buttermilk
1 cup fresh blueberries
1/4 cup (60 ml) vegetable oil
Instructions
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and sugar.
In a separate bowl, whisk the egg until frothy, then add buttermilk and vegetable oil until smooth.
Slowly pour the wet ingredients into the dry mixture, stirring gently until just combined.
Gently fold in fresh blueberries, being careful not to crush them.
Scoop generous portions of batter onto the prepared baking sheet, spacing them 2 inches apart.
Bake for 15-18 minutes until puffed and lightly golden on top, rotating halfway through.
Remove from the oven and cool on the baking sheet for a few minutes before transferring to a wire rack.
In a small bowl, whisk powdered sugar with milk until smooth to make the glaze.
Drizzle the glaze over warm fritters and sprinkle with extra cinnamon if desired.
Let the glazed fritters set for a few moments before serving them warm.
Enjoy your Baked Blueberry Fritter Bites with loved ones and your favorite beverage.
Notes
If you don’t have buttermilk, you can use milk with a splash of vinegar as a substitute.
