  • 3 tablespoons granulated sugar
  • 7 tablespoons butter (melted)
  • 1 (8-ounce) package cream cheese, softened
  • 1 (14-ounce) can sweetened condensed milk
  • 1/3 cup freshly squeezed lemon juice
  • 1 teaspoon vanilla extract
  • 1 (21-ounce) can cherry pie filling

Instructions

  1. In a small mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix well and set aside.
  2. In a medium bowl, beat softened cream cheese until smooth using an electric mixer.
  3. Gradually blend in sweetened condensed milk until fully combined.
  4. Add lemon juice and vanilla extract to the cream cheese mixture and stir until well combined.
  5. Arrange 6 plastic cups on a cookie sheet and scoop 2 tablespoons of the graham cracker mixture into each cup, pressing it down gently.
  6. Spoon 3 tablespoons of cheesecake mixture into each cup and spread evenly over the crust.
  7. Evenly divide half of the cherry pie filling among the cups, saving the rest for the next layer.
  8. Sprinkle 2 tablespoons of graham cracker crumbs over the cherry layer in each cup.
  9. Fill the cups with the remaining cheesecake mixture, smoothing it out evenly.
  10. Top each parfait with the reserved cherry pie filling and a sprinkle of graham cracker crumbs for decoration.
  11. Serve immediately or chill for up to 24 hours before serving.
