1 large Granny Smith apple, peeled and diced
1 tablespoon brown sugar

⅓ cup chopped walnuts or pecans
⅓ cup dried cranberries
¼ teaspoon ground nutmeg
Pinch of ground cloves
Pinch of allspice
Chopped nuts
Maple syrup drizzle
Dollop of Greek yogurt or dairy-free alternative
Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with foil or parchment. Pierce each sweet potato with a fork, rub with olive oil, sprinkle with sea salt, and roast for 45–60 minutes until fork-tender.
In a skillet, melt butter over medium heat. Add diced apples and cook for 3–5 minutes. Stir in brown sugar, cinnamon, nutmeg, cloves, and allspice. Cook until apples soften and caramelize slightly.
Mix in chopped nuts and dried cranberries. Cook for another 2 minutes, stirring to combine.
Slice open roasted sweet potatoes and fluff the insides with a fork. Spoon the apple mixture over each potato generously.
Garnish with a drizzle of maple syrup, extra nuts, or a dollop of yogurt if desired. Serve warm and enjoy.
